Omelette with gravy!

This recipe I came up a real long while ago, and it's tasty and easy! It's quick as well!

Omelette with gravy (serves 1 person)

7 shrimps/ 2 imitation crab sticks, sliced diagonally to small pieces
ginger the size of two thumbs, sliced thinly
2 garlic cloves, sliced thinly
2 mushrooms, sliced thinly (optional)
1/4 onion, sliced thinly
2 eggs
1/2 cup hot water
1/2 teaspoon chicken stock powder
1 tablespoons oyster sauce
1 teaspoon soy sauce
2 teaspoons sesame oil
chopped green onion (optional)
cornstarch solution

1. Beat the eggs lightly in a bowl.

 2. Heat half of the sesame oil in a frying pan.

3. Saute garlic and ginger first.

  When aromatic, add the onions.

4. When the onion is tender, add the shrimp or crab meat.

When shrimp ( or crab is heated well) changes its colour, add the mushrooms.

Stir-fry for about 2 minutes.

5. Take out the stir-fried mixture to and put in the beaten egg.

Mix lightly.

6. Heat the rest of the sesame oil in the frying pan. Add the egg mixture.

Push the cooked edges of the cook towards the center.

7. When the egg is no longer runny, flip the omelette and cook the other side for about 40 seconds.

8. When it is cooked, place the omelette on a hot bed of rice.

9. Combine the hot water, chicken stock powder,

soy sauce

and oyster sauce in a bowl.

10. Pour the mixture in the frying pan and stir.

11. When the sauce boils, gradually add the cornstarch solution until you get gravy-like consistency.

12. Pour the piping hot gravy onto the omelette.

The sauce is a little dark here because I added too much oyster sauce! Only use 1 tablespoon.

Garnish with green onions and enjoy!

If you don't want to eat with rice, serve it with noodles instead! The gravy and noodles kind of taste like chow mein and the omelette is a harmonious bonus!
