Chicken Instant Noodles!
Yuuh, the brand today is Nissin Hong Kong. I really like the thin noodles!

Mapo Tofu!
Today, I made mapo tofu.
I followed Cooking With Dog's video recipe.
Mine is not authentic, because I substituted hoisin sauce with tao si for the sweet bean paste, sriracha sauce for the chili bean paste and green onions for the garlic chives. I also added in mushrooms!
I did an extra step with the tofu by boiling it for 2-3 minutes before hand. That came from papadesuyo777's video.
It tasted pretty good and I really like it! The spiciness is mild so it isn't that spicy.

Kimchi Hotpot!
Yesterday's dinner was so good!

This was intended to be only eaten by me. hehe. If I had known I would've added tons more toppings!
Ingredients included a lot of noodles, kimchi, kale, enoki mushrooms, crimini mushrooms, carrots, shrimps, onions and hotdogs. Hurray!

Bread Pudding?!
I don't know, I just liked this one! It wasn't too sweet and it was quite bland, unlike good bread puddings.
But I guess its boring taste brought me comfort!
Bread Pudding (serves 1)
1 apple, cubed or sliced thinly
1 and 1/2 cups bread, cubed
2/3 cup milk
1 egg, beaten
1 tablespoon (3 teaspoons) brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
1/4 cup oatmeal
1. Combine milk, egg, vanilla extract, butter, 2 teaspoons of sugar and half a teaspoon of cinnamon in a bowl. To distribute flavour evenly, strain if desired.
2. Mix the oatmeal, nutmeg, the rest of the cinnamon and the rest of the sugar in another bowl. Cut in some butter if you prefer.
3. Add the bread and apples to the milk mixture and soak for a few seconds.
4. Grease the baking pan and add the bread mixture in.
5. Sprinkle the oatmeal topping and bake for about 35-40 minutes in 350°C.
6. Let it cool for 5-10 minutes.
I used this Italian brand bread and I liked it! And absolutely, feel free to tweak in flavours and ingredients to your taste; it is a bland dish that I made.

Chicken Miso Soup!
Almost a week ago, I got a little cold and wanted to make some soup. It was either Campbell's mushroom soup or something else. But since I had some Campbell's the day before, and since it was canned, I decided to make a soup.
One of the recipes that came up in the Google Search for Chicken Miso soup was this. Pretty much the basis and probably better than mine, I was lacking some ingredients and so this recipe came up.
Simple but good, but not great.

Grilled Kimcheese Sandwich!
Yep! So a few days ago, I wanted to make a grilled cheese sandwich with kimchi after looking at this. One of the suggestions in the comments were to stir-fry the kimchi for a caramelized taste!
I did so, on said day and here was the result.
For the filling, I used one slice of White Cheddar American Cheese. I stir-fried some pepperoni and fried the kimchi and a little thinly sliced onion in its fat.
I toasted the inner sides of bread on butter in a pan (based from Serious Eats recipe) but I opted out to grill the whole sandwich on the pan. I used the toaster for it instead.
It was quite good but it was definitely lacking something! The sandwich needed more cheese, the pepperoni overpowered a little with its saltiness and the bread's toasted state was not glorious enough.
