Grilled Kimcheese Sandwich!

Yep! So a few days ago, I wanted to make a grilled cheese sandwich with kimchi after looking at this. One of the suggestions in the comments were to stir-fry the kimchi for a caramelized taste! 

I did so, on said day and here was the result.


For the filling, I used one slice of White Cheddar American Cheese. I stir-fried some pepperoni and fried the kimchi and a little thinly sliced onion in its fat.

I toasted the inner sides of bread on butter in a pan (based from Serious Eats recipe) but I opted out to grill the whole sandwich on the pan. I used the toaster for it instead.

It was quite good but it was definitely lacking something! The sandwich needed more cheese, the pepperoni overpowered a little with its saltiness and the bread's toasted state was not glorious enough.

The next day, I actually nailed it! It was awesome.



Grilling the whole thing in the pan made it so much BETTER! Inner sides were once again toasted lightly in butter and the whole sandwich was toasted with the remaining butter instead of adding another tablespoon of it. One of the best decisions ever. Haha.


The other side may look like it's badly burnt but it really wasn't! In fact, its burnt and crisp crunch made the sandwich really good. The bread was now crisp, soft and just downright scrumptious.

Tada!

The cheese was actually better melted, too.


There were bits of adjustments to the filling and they were not of regret, not at all. 

It doesn't look too obvious, but I DOUBLED the amount of cheese slices! Yeah... Still White Cheddar.

Kimchi was always drained, the onions were thinly sliced as well but this time I chopped the pepperoni instead to bits. 

While stir-frying, the pepperoni bits were jumping due to the heat! At that point I toss in the onions and coat with pepperoni fat. Kimchi in and done!

I mixed in some green onions after stir-frying.


The sweetness and crispness of the onions contrasted nicely with the spicy but really good kimchi and the pepperoni added bits of smoky flavour and meaty texture. Doubling the cheese mellowed out the kimchi filling better. 

Toasted and buttered bread wrapped up the sandwich amazingly because of its distinct and glorious crunch. (It was so good I had to use that word.)

I highly do not recommend taking pictures of your sandwich before consumption (LOL). This stuff is the best when immediately lifted off the frying pan.

In the end, I think this is the best sandwich I have ever made.
