Kimchi Pork!

I really want to start typing up the recipe for the Kimchi Fried Rice but I don't feel like doing right now...Though I did have something with kimchi and it was delicious.

The recipe's pretty much inspired by runnyrunny999's video:

Kimchi Pork (serves 2)

75 grams cooked pork, sliced to bite-size pieces
1/3 cup kimchi (if you like, cut to bite-size pieces as well)
3 green onions, 2 sliced to 2 inch pieces, 1 chopped for garnish
1/2 small onion, sliced in wedges
2 slices of 1 1/2 inch long ginger, minced (or 2 teaspoons grated ginger)
1 medium clove of garlic, coarsely chopped
(optional) 4 mushrooms, chopped to bite-size pieces
less than 2 tablespoons Chinese cooking wine
less than a tablespoon of miso paste
1 teaspoon sugar (preferably brown)
a dash of sesame oil

1. Combine the wine, miso, sugar and sesame oil to a smooth mixture.
2. Heat oil in a pan and saute the garlic and ginger first.
3. When aromatic, add the onion and stir-fry.
4. When the onion is slightly translucent, add the pork and mushrooms in.
5. Combine to coat them with oil.
6. Put the green onions in. Don't let them wilt too much.
7. Saute the kimchi in and toss to coat the ingredients with the kimchi.
8. Pour in the miso mixture into the pan and stir-fry and combine the food quickly so the miso mixture does not scorch.
9. Serve the Kimchi Pork on a bed of rice and sprinkle in the green onion for garnish. Enjoy!

I just ate some right now and it was so yummy. I like the sweet flavour from the sugar and onion mingle with the spiciness of the kimchi :)
